Our heritage is built on craftsmanship, family tradition, and creating fresh handmade favourites people love to return to.

Before moving to London, founder Ernst Strassman built his career as a skilled pâtissier in Switzerland, working within luxury hotels and respected patisseries where he refined his passion for craftsmanship, quality ingredients, and traditional baking.

After relocating to the UK, Ernst took on the prestigious role of Head Pâtissier at Fortnum & Mason in London, one of the country’s most renowned department stores. His experience there strengthened his reputation for exceptional baking and a dedication to creating beautifully made confectionery.

In 1969, Ernst opened Heidi’s Patisserie, named after his daughter, bringing together continental confectionery and traditional English recipes. What began as a passion for artisan baking quickly became a much-loved part of the local community and in 1993 Heidi joined the company and is still running the proud family business today.
